Meatless Monday actually extends to Tuesday, Wednesday, Thursday, etc. for me. I don’t mean everyday because hiiii, I’m an omnivore. I eat ALL. THE. THINGS.
But my tastebuds prefer vegetarian fare most of the time. My body craves meat and when my body is craving it, my tastebuds crave it, too and so I fill that craving. But 80% of the time I’d prefer the meatless variety. I still have some stomach trouble from the surgery I had on my stomach many moons ago (ulcer ate a hole in my uber sensitive stomach like 8 years ago, good times), so vegetarian eats are usually a lot gentler on me.
Also, can we be honest? I hate cooking meat. Unless it’s in sausage form, whole chicken form or just straight up ground, I hate cooking it. Will I? Yes. Will I usually do everything to avoid it? Yes. I just hate handling and cooking meat. It isn’t my thing. I do it when I have to or when there’s something I actually really want to make, but I hate it.
SO, I thought it was time for a round up of my 12 favorite healthy vegetarian recipes for fall! Keep this post in your back pocket for a quick reference when you’re looking for something delicious, healthy and filling for fall or winter. They’re all winners in my book! Here we goooooooo!
