I hope everyone’s holidays were exceptionally wonderful this year! Mine was filled with a lot of good food, good wine, laughter and some struggles. With all of the gatherings, I had little desire to cook real meals aside from breakfast tacos or reheated pasta, BUT I’d say it’s time we start dipping our toes back in the kitchen, don’t you agree?
January is still going to be exceptionally busy on my end so we’re keeping it simple with easy, healthy, and minimal amounts of time when it comes to hands-on cooking. If you’re in the same boat, here’s my 15 go-to healthy recipes for when life is a little cray cray. Enjoy!

Not a post, but like.. scramble some eggs. Cook some bacon. Shred some cheese. Pile in a tortilla, top with salsa/hot sauce. BOOM. DONE.
