Meet my current favorite go-to lunch!
If you’ve followed the weekly eats/budgeting posts, you know that usually once a week I go to a cafe downtown where you can get a full lunch for anywhere from $3-$5. It’s volunteer run, government funded and 100% vegeterian/vegan. As far as I know they also grow quite a bit of their own vegetables/use some local products. It’s a really nice melting pot of everyone in the community from the less fortunate to the more financially secure all coming together to have a good, affordable meal without the classism. I really enjoy it.
ANYWAY my favorite thing to get there is a hummus wrap with a side grain/bean salad. It’s tasty and keeps me full for a good 4-5 hours most of the time. The wrap is nothing special, literally just heaps of hummus with some shredded veggies thrown in for crunch all wrapped up in a flour tortilla. Sometimes it’s white, sometimes it’s whole grain, sometimes it’s a flavored tortilla. Either way, it’s always tasty.
At some point I clued in that I could just buy (or make!) some hummus, tortillas and shred up some veggies and make my own hummus wraps. Obviously. I don’t know why I never thought to do it, I just didn’t.
Finally, as I had already gone through tubs and tubs of hummus and then making my own, I decided to make my own damn wraps for everyday lunches, not just once a week.
Literally you guys, just HEAP like 1/3rd cup of hummus… I don’t measure, it just looks like that much, sprinkle on some shredded or finely chopped veggies and wrap it up! So simple but sooo tasty.
Often times I throw feta in because FETA and other times I’ll toss in some avocado if I have one that’s particularly yummy. On the side of the wrap, I’ll either have some fruit/cottage cheese or fruit/veggies/slices of cheese or whatever sounds delicious that day.
Tabbouleh is a particularly nice side. With chickpeas thrown in. Aka tabbouleh a la Queen Street Commons.
This is also weird- I like making it ahead of time and letting the hummus/veggies make the tortilla squishy. Orrrrr slightly soggy? That doesn’t sound appetizing AT ALL but it really is. So soft and yum.
This hummus veggie wrap also makes a weirdly good snack if you’re in need of something more substantial. You know when you’re ‘I’m ready for a meal’ hungry, but it’s not a meal time and/or you don’t wanna end up full for 4-5 hours because your actual next meal is maybe in 3 hours?
Been there. Nixed the sides, just had the wrap, full and happy til DINNAH.
It also costs me like… 80 cents per wrap. Pricing varies depending on where you live/if ya make my caramelized onion hummus… which you should do. Or not. WHATEVER.
- 1 10inch tortilla - any variety!
- ⅓ cup(ish) your fav hummus
- your fav shredded veggies
- optional: feta, goat cheese, avocado, TJs everything bagel seasoning, ETC.
- Heap the hummus, add the veggies and other optional add-ins, roll it up and EAT
