Honey Roasted Rhubarb

  • 2 large rhubarb stalks, ends and tops trimmed, cut to finger sized pieces
  • 2-3 TBSP raw honey**
  • pinch of salt
  • ½ a vanilla bean
  1. Preheat oven to 350F
  2. place your rhubarb in an 8x8 inch baking dish and toss with honey and a pinch of salt.
  3. Scrape the vanilla beans from the pod and toss to combine with the rhubarb. Let sit for 20-25 minutes.
  4. Place on the center rack of your oven and bake for 20-25 minutes, flipping once, or until tender but not totally mushy.
  5. Serve warm or allow to cool. Serve with ice cream, yogurt and toppings galore.
I definitely preferred mine cold but it's great if you let it sit in its juices for 20-30 mins while it's hot to soak back up all the juices.
I like my rhubarb to still stay tart and not super sweet. If you want it really sweet, you're going to want to add more honey/sugar. I don't think I'd add more than ¼-1/3 of a cup.... since that seems like A LOT. But you do you. Add whatcha need to add.
