Do you ever have those dreams where you’re in high school or university/college again and you get lost on your way to your classes and are going to be late and are FREAKING out? Or you forgot about a test or major project and now you’re failing and you’re never going to graduate and it’s just the WORST THING EVER?
Or for some reason you’re back working at the job you hated with a burning passion? And then you wake up and you realize that it was all a dream and you have a huge wave of relief that it isn’t your actual life? Because it happens to me a lot, like this past weekend.
I was even more relieved when I woke up with a view of the mountains in Blue Mountain for my sister’s bachelorette weekend. The village and mountain is breath taking and charming and it was even more perfect with all of the Christmas decorations and the fireplace in our condo. There was a lot of pizza, cheese, wine, lattes and donuts. So many donuts in the afternoon, evening, late night and breakfast. All covered in powdered sugar, filled with jelly or cream and all consumed very happily.
Now it’s back to real life for the rest of the week before more holiday things this coming weekend and that means normal, healthy, easy and quick meals to keep us feeling good all week. First up, this Thai red curry soba salad. GUYSSSS I love this salad. I first had it in Ottawa at Mad Radish and then immediately recreated it when I got home. It’s full of fresh, crunchy veggies, soba noodles, my thai red curry coconut sauce and the same cilantro lime vinaigrette from the chili bowls. It makes ENORMOUS servings that fill you up and keep you going for hours but it also makes a super excellent side at dinner. We personally enjoy it with my brown sugar sesame salmon. The flavors go well and since they both work really well for make-ahead meals, it’s a super quick healthy weeknight meal.
I’m just giving the general proportions to make one serving and then increase as necessary! We really only make 1-2 at a time depending on if we’re having anything with it or not but I like to have the veggies, sauces and noodles already prepped and ready to go in the fridge for whenever we want one.

- 2oz soba noodles or your favorite pasta, cooked according to package directions
- ½ cup shredded red cabbage
- ½ cup shredded carrots
- ½ cup chopped broccoli florets
- ½ cup chopped tomatoes
- ½ cup sliced cucumbers
- ¼ cup red curry sauce *see link below
- 2 tbsp cilantro lime vinaigrette *see link below
- optional: pickled ginger and/or sesame seeds, to serve
- When you've cooked your noodles, drain and rinse under very cold water.
- Place all ingredients in a large bowl and toss until well combined. Season with salt to taste and serve with pickled ginger and/or sesame seeds if desired. I highly recommend it!
