This turkey, goat cheese and rosemary bagel sandwich is a super quick, healthy and satisfying lunch. Even better if grilled! It’ll be a new favorite go-to easy lunch.
How my life has looked lately:
Write down 134953745 ideas for things I want to cook/bake for us this week. Plan the grocery shopping. Get to the store. Change my mind 600 times, forget 80% of what I was going to get. Get ground beef out of the freezer, make my easy taco rice bowls… minus to rice + usually a crap ton of chopped up mushrooms, peppers, onions and spinach because those things never run out in my fridge, pile it on nachos with cheese+ bake. Or on leftover cold sweet potatoes because lately that’s my jam, top it with greek yogurt and salsa and have a pile of sauteed frozen green beans on the side.
Repeat x7 for the week.
Breakfast? Baked oatmeal leftover, eaten cold from the fridge with a crap ton of coffee & cream. Lunch? You’re pretty much lookin’ at it except for the days I got out. Which is a lot lately. There’s been a lot of restaurant burgers and paninis in my life lately.
My tastes are totally messed up. Chocolate tastes like ground coffee beans (in such a bad way), chicken tastes like LITERALLY nothing, my fav mint chip ice cream tastes horrid, half of the time coffee is bitter and disgusting, my favorite hard cider is so gross I can’t even swallow it and I swear if you come near me with a raw or cooked pork sausage, I will murder you. SO MANY more things just taste so gross and blah to me (peanut butter SUCKS all of a sudden) that it’s just straight up annoying. I also just cannot be bothered with vegetables unless it’s hidden in spiced beef or cooked in to a curry (coming so soon. omgosh. think: lemongrass+coconut+ginger+veggies+deliciousness)
But pumpkin things. You guys. Pumpkin things are just the BEST. I can’t even count how many things I’ve made and just destroyed. So the blog may be lacking right now but come the fall, my word, it’s gonna be goooooood.
For now, I leave you with a stupid easy lunch idea for when you’re all about the carbs+cheese+protein and you just can’t even with the vegetables. It’s satisfying, healthy and uses pretty basic ingredients that I’m guessing you have on hand regularly. I mean, I do, so I generally assume that anything I do, everyone else does as well.
Like, when I’m not in to salads/veggies/lighter foods, I’m like ‘Most people just want comfort food anyway’ and then when I’m really feelin’ the veg, I’m like ‘Everyone wants things like this right now because xyz.’
I also always hope that there’s enough of you out there who think that the food trends are stupid/ridiculous and unsustainable and, frankly, a lot of them feed in to eating disorders so I can’t get onboard with them. So I don’t post trendy things or even try to make something that’s flooding the interwebs even though it would be better for my blog’s traffic. I can’t do it and I won’t.
Obviously I’m wrong but in my world, that’s how it goes.
Also, I hate deli meat. HATE IT. But right now, I’m definitely on the smoked turkey sliced breast train. It tastes really good right now. Like, so satisfying. I ate a smoked turkey drumstick (which I used to hate) and I swear it was the most satisfying thing I could have possibly eaten at that time.
WHO AM I?
- 1 seedy bagel or 2 slices seedy bread
- goat cheese
- ½-1 tsp finely diced fresh rosemary
- sliced smoked turkey breast
- sliced tomatoes
- avocado slices
- toast the bagel or bread slices, fill with as much of everything else as you want and EAT.
- Also a good idea though, if you're using bread, grill it uppp so everything inside is all warm and melty. It's goooooooood.
