Hey hi!
Ummmm is everyone else ready for Spring? ‘Cause I’m pretty much dying for it.
I’ve had enough of snow/cold/grey days and I want all of the sunshine and warmth. Unfortunately we aren’t going to see that for at least another few weeks soooo it’s yoga at home in our spare bedroom and toughing it out in winter coats and boots for a little longer.
I told Mark next year we are going somewhere warm in February. Hopefully it actually happens.
ANYWHO on to the eats! Photos are unedited like always, so blame the shitty light of this dumb, never ending winter.
If you remember last week, I was kind of tired of baked oatmeal. At first I was just sick of chocolate in the morning, and then it became ‘I can’t eat one more slice of baked oatmeal for breakfast in the near future.’ So I didn’t. I’m always curious about how different breakfasts will affect me in terms of staying full/steady energy/etc. So it was an interesting week for figuring out how to pair different foods to stay full as long as my usual go-to apple + pb + baked oatmeal.
Cheesy eggs and fruit followed up immediately by a graham cracker + pb that went unpictured. I wasn’t super hungry this particular morning but that bought me like 3 hours.
Red fife banana bread with extra banana and no eggs… soooooooo good. Plus fruit + cottage cheese.
More banana bread, fruit + cheesy eggs. This did a much better job than the cottage cheese.
Cinnamon raisin bagel + butter + fruit + cheesy eggs. This was the most filling breakfast, bought me like 4 hours.
Silver Hills sprouted cinnamon raisin bread + butter + berries + cottage cheese. Followed up immediately by a banana that went unpictured. Bought me about 3.5 hours. Had 2 clients right after this so it kept me going through that.
Lunches:
This’ll be boring ’cause I ate the same variations of lunch pretty much every single day…
Hummus + veggie wrap with various things on the side. Eventually I stopped taking pictures of the same lunch…
Favorite side was the salad w/avocado + peanut dressing, followed up by some cheese. Not tired of it yet. If it aint broke…
Dinners:
Squealer burgers. SO GOOD. Recipe coming closer to grillin’ season. Also broccoli. I missed broccoli… Mark asked me to not buy it for a while but after a few weeks I missed it sooo I’m eating it and feeding him salad. He had the burgers for 4 nights w/salad.
Leftover 6 cheese pizza + broccoli.
Probably the best curry I’ve ever made. It looks sooooo unappealing but it was amazing. Eaten with 10% yogurt to cool down the spices a bit. There was enough carbs in the chickpeas + potatoes and I wasn’t feelin’ rice… so I dipped broccoli in it. Yum.
Random sweet potato + lentil soup + bread + butter. The weather’s been shit so it’s been all the comfort foods for dinner.
Homemade pizza! Mark’s been asking me to make it for a while but I was too lazy. It was finally kind of sunny so I was more motivated. 3 cheeses + caramelized onions for me, all that + pepperoni for Mark. Ignore the instagram text on the second photo. This was probably the best pizza of life. It may not look like it, but the sauce + crust + cheeses were SPOT ON. Actually the best pizza either of us have ever eaten. Ever. I made it a goal to make amazing homemade pizza and it took me a year to be satisfied. We ate a lot of pizza that year.
I realize my dinners aren’t usually very big, but it’s because I tend to eat a lot more during the day and when I workout (which only happens around 4-5pm depending on how busy I am), I lose my appetite and can’t eat a big dinner. Usually before bed I’m hungry and have something substantial.
Snacks:
Graham crackers + pb. A regular staple.
Apple + pb. Another nearly daily staple.
Stove top popcorn popped in coconut oil + topped with salt and butter. These were purple kernels, that’s why they look weird.
The creamiest lemon pie ice cream.
Kylie’s peanut butter cookies
Berries + banana + Liberte 10% plain yogurt
More banana bread that went unpictured, chocolate that basically always goes unpictured. I often don’t remember to take pictures of snacks because I forget but you get the idea.
Have the best weekend! We’re bbqing more homemade pizzas + going to soak up the warmer temps and sun that we’re supposed to be getting. It’s also our anniversary buuuuuut it’s St. Patty’s day and there’s no way in hell we’re going out in that. Sooo we’ll celebrate next weekend.
