I’m currently on my way to Ohio for a quick 3 day trip for a girl’s shopping weekend. TBH, I don’t do a lot of shopping in general, but Mark could use some jeans so I’m going to look for those and for some spring clothes. I’m also 100% doing a Trader Joe’s run because anytime I’m anywhere that has a TJ’s, I’m there stocking up.
ANYWHO because I’m going to be gone for basically half the week aaand Mark and I both are busy/out almost everyday that I’m ‘home,’ there won’t be a grocery recap next week. 80% of our meals won’t be at home sooo, it makes no sense. Cool? Cool.
For now we have last week’s grocery haul!
We spent: $48
Cereal, 2 heads of broccoli, 1lb ground beef, 3.5lb pork should roast (that I forgot to photograph before I cooked it for the carnitas!), 2 lb dry chickpeas, mushrooms, bananas, fuji apples, cheddar cheese, carrots, limes, white onions, unpictured red onion (that I pickled before the photo…oops), tomato paste, cashew granola bars, salsa, vinegar, sour cream, red fife flour, tomatoes, chips
Banana baked oatmeal with salted peanut butter and an apple on repeat… I used the same photo because it’s still the same breakfast. Had this 3 times. I just don’t get sick of it… I should probably share the recipe. Also these fuji apples I got are the juiciest, sweetest, crunchiest, most delicious apples I’ve ever eaten. The best.
Cheesy eggs, potatoes, veggies & hummus, orange slices, avocado. Had this for brunch on Monday (it was a holiday here). No bacon this week. I feel like we had a pretty serious fill of bacon last week
For the easiest potatoes, take leftover baked potatoes, chop them up, heat up a bunch of olive oil in a skillet, once hot, add potatoes and stir them around every so often until browned and crispy. Add whatever seasoning you want.
Chocolate chip banana bread w/butter, pb and an apple. Had a craving for banana bread, made my healthy chocolate chip banana bread with the red fife flour from above and doubled the recipe to make a normal sized loaf. Love red fife. Followed up by half an orange I found in the fridge one morning.
I found myself excessively hungry especially in the mornings the last few days, so Sunday morning I had a hunk of baked oatmeal plus this banana bread + butter and an apple and pb. It was a pretty delicious morning.
And as always, Mark had cereal with juice.
Carnitas Quesadillas. Put leftover carnitas, refried beans, pickled red onions and cheddar in to the last of the flatbreads and grilled til hot and gooey. This was super satisfying. Had it twice. served w/ salsa and sour cream. Actually the best quesadilla that’s ever entered my mouth. Mark agreed.

Salisbury steaks. Dinner leftovers. Mushroom/beef gravy, barley, corn, leftover potatoes from brunch.
I went out for lunch with a girlfriend one day to that same cafe I wrote about before where lunch is $4. Excellent as always. I went with the burrito this time and a bean/grain salad.
I also had huevos rancheros for lunch one day. Never tire of this.
Carnitas Mexican rice, cheddar, refried beans, avocado, pickled red onions, fresh pico de gallo. Had this twice. Easily one of the best meals I’ve ever cooked. Doesn’t look like it… but it was amazing. Also that’s salsa, not pico in the photo. We used all of the pico I made the first time… the second time we had to use salsa.
Salisbury steaks. Per above. I’m really hoping the lighting will improve soon… ALSO that’s a countdown timer on the oven. I was not making dinner at 2:26 pm. I think it was like 6ish.

So usually we have a date night/friends over/out with people/whatever and this week we were both just not feeling it. My sleep was shit for half of the week, Mark was working a lot more/studying and neither of us felt like being social aside from the volunteering we did for a bit at an event our church was holding for the community.
Mark went to spend some time with his family and I stayed home, so I made myself a solo date night cheese board. Probably lame, but I really enjoyed it. Most of the stuff in it came from what we already had in the fridge, but I picked up a wheel of Camembert and a bag of grapes. It was $8. I didn’t include it in the grocery haul because it was last minute and replaced our normal date night. Soooo.. take it as you will.
This was just missing wine and some hot buttered bread. I ran outta wine a week ago and haven’t replaced it yet. I also started majorly craving graham crackers with goat cheese and blueberry jam. I think that combo sounds so good. Or strawberry jam with sharp cheddar. YUM.
Granola bars, chocolate, triple chocolate cookies (based off of this recipe), Kylie’s peanut butter cookies, chips and donuts from v-day. Aaaannddd a couple of days I ate pickled beets with hummus… and then added cheese after the photo. IDK why this sounded so good. It’s very unlike me… but I could not stop eating it.
I went with apple fritter and coconut cream. I 1000% prefer cake donuts over yeast… but they only had yeast and these were still good.
